In recent years, Danish food culture has been revolutionized – and now the conditions for employees must follow suit! Good Danish food should go hand in hand with good Danish working conditions.
We have already entered into a collective agreement with 3F, which ensures our employees better wages than the current collective agreement. It is only fair – our employees are among the most skilled in the industry.
The name 1899 refers to the September Agreement, which is popularly called the “constitution of the labor market.” It has helped create good conditions in most parts of the Danish labor market – now it is the restaurant industry’s turn!
Sinem Dybvad Demir is a trained waiter and has worked as a restaurant manager at Mikkeller Færgekroen (in Tivoli) – and as a waiter at a wide range of restaurants including Restaurant Puk
Rune Dybvad Demir holds a Master of Arts in Politics and Administration combined with History (RUC, 2019). Rune has worked for several years with advocacy and communication.
Chef Alexandra Jægerstrøm trained with the iconic smørrebrød queen, Ida Davidsen. Jægerstrøm has since worked at several of the leading smørrebrød restaurants – including seven years at Restaurant Schønnemann, and as sous chef at Restaurant Kronborg.

We have a mix of employees of all ages, who all share a passion for Danish food culture and a good experience.
We have a high level of professionalism that we are very proud of, and we look forward to you getting to know each and every one of the unique talents we have.
At Restaurant 1899, the open sandwiches are of the highest quality. We get the bread from Gilleleje Harbour. The rest of the food is made from scratch in our own kitchen, where we always use fresh ingredients.
There are two menus: the fixed menu and the seasonal menu. In the fixed menu, you know what you are getting; the classic pieces of open sandwiches – with a few of the chef’s own inventions added.
The seasonal menu will be based on seasonal ingredients – and there will therefore always be new taste experiences with each season.
1899 is a restaurant where both the food and the atmosphere are top notch. The service is in Danish – and the atmosphere is relaxed.
The restaurant is ideal for business lunches, Christmas lunches or other cozy moments where you need good company in a good setting.
